Abstract
Kentos is the part of the coconut that is contained in old coconuts. Kentos is the part that will develop into coconut shoots. This section is often wasted and not utilized. In this study, kentos was used as a snack called fried coconut sprouts. The aim of the research is to make kentos waste into food that is liked by all levels of society. The results showed that the panelists liked the fried coconut sprouts organoleptically, in terms of taste, color, aroma, and texture. The panelists preferred treatment with the addition of NaHCO3. Based on the t test, there was a significant difference between the treatment without NaHCO3 and the treatment with NaHCO3 in terms of taste and texture. But in terms of color and aroma, the result is no real difference
